Step-by-Step Instructions

  • In a small saucepan over medium heat, combine blackberries, sugar, and lemon juice. Cook for about 5–7 minutes until the mixture thickens slightly. Strain if desired and let it cool.
  • In a mixing bowl, beat cream cheese and sugar until smooth. Mix in vanilla and whipped topping, then fold in graham cracker crumbs and half of the cooled compote.
  • Scoop tablespoon-sized portions of the cheesecake mixture into balls, place on parchment-lined baking sheet, insert lollipop sticks, and freeze for at least 1 hour.
  • Melt dark chocolate wafers, dip each cheesecake pop in the melted chocolate, and allow excess to drip off before placing back on parchment.
  • Before chocolate sets, sprinkle with edible glitter or decorations and drizzle remaining blackberry compote. Chill for 15–20 minutes until set.

Notes

Use room temperature cream cheese for a smooth mixture. Do not overmix cheesecake filling, and ensure pops are fully frozen before dipping in chocolate.
