Add 220 g cold, cubed unsalted butter, and use a pastry cutter to mix until the mixture resembles coarse crumbs. Gradually add 2.5 tablespoon chilled water, stirring until the dough comes together. Shape it into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Cook the Apple Filling

  • Peel, core, and slice your apples into thin wedges. In a large skillet over medium heat, melt 75 g of unsalted butter. Add the sliced apples, 110 g brown sugar, 1.25 teaspoon ground cinnamon, and 0.25 teaspoon salt. Pour in 2.5 tablespoon water and cook for about 10–12 minutes, stirring occasionally until the apples are tender and slightly caramelized. Remove from heat and let cool.

Roll Out the Dough

  • Preheat your oven to 190°C (375°F). On a floured surface, roll out half of your chilled pie dough to fit your pie dish. Carefully transfer the rolled dough to the dish, pressing it into the corners and trimming any excess dough. Evenly sprinkle 3 tablespoon almond flour over the bottom to absorb apple juices. Gently pour in the cooled apple filling to create a delightful layer of flavor.

Create the Pie Top

  • Roll out the remaining pie dough on the floured surface. You can cut it into strips to create a lattice top or simply cover with a full dough layer.
