For Cooking

  • 2 medium russet potatoes Peeled and cubed

  • 1-3 scotch bonnet peppers Adjust for spice level
  • 2 green onions Lightly crushed or chopped
  • 2 sprigs fresh thyme
  • 1 cup organic chicken stock Low-sodium

Step-by-Step Instructions

  • In a large bowl, combine chicken pieces, browning, Green Seasoning, sea salt, All-Purpose Blend, smoked paprika, and curry powder. Mix thoroughly and refrigerate for a minimum of 3 hours.
  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat, add brown sugar until it dissolves. Sear marinated chicken for 3-4 minutes each side until browned.
  • Toast Jamaican curry powder in the same skillet for 2-3 minutes until fragrant.
  • Sauté garlic, ginger, scotch bonnet, green onions, carrots, and bell pepper until fragrant, about 4-5 minutes. Add allspice, salt, and pepper.
  • Pour in coconut milk and chicken stock; mix well and bring to a gentle boil for 1 minute.
  • Return seared chicken, potatoes, and thyme. Stir and simmer for 20-25 minutes until sauce thickens and chicken is tender.
  • Once cooked, remove from heat and prepare to serve with your choice of sides.
  • Garnish with scallions or red pepper flakes before serving.
