  • 2 large eggs lightly beaten
  • 2 green onions finely sliced
  • 2 cloves garlic minced
  • 0.5 teaspoon black pepper freshly ground
  • 0.25 teaspoon crushed red pepper flakes optional
  • olive oil for frying

  • Grate the zucchinis and squeeze out excess liquid using a kitchen towel.
  • Sprinkle sea salt and let sit for 10 minutes.
  • Combine all ingredients in a bowl and mix until well combined.
  • Preheat skillet over medium heat and add olive oil.
  • Scoop and flatten zucchini mixture into the skillet, cooking for 3-4 minutes until golden brown.
  • Flip and cook other side for another 3-4 minutes until crispy.
  • Drain on paper towels to remove excess oil.
  • Serve warm, garnished if desired.

Notes

Excess moisture can lead to soggy fritters. Use freshly grated cheese for best results. Store in an airtight container for up to 3 days.
