Equipment

  • Baking Sheets
  • Medium saucepan
  • Slow Cooker
  • Dutch oven

Ingredients

For the Meatballs

  • 3 pounds ground beef chuck provides a rich, juicy texture
  • 1 can evaporated milk adds moisture
  • ¼ cup dry breadcrumbs acts as a binder
  • 1 tablespoon Worcestershire sauce adds umami
  • 1 packet onion soup mix infuses savory flavor

For the Sauce

  • 2 cups ketchup provides sweetness and tang
  • 1 cup brown sugar enhances sweetness
  • ½ cup port wine adds richness
  • 1 cup fresh cranberries optional for garnish

Instructions

Step-by-Step Instructions

  • In a large mixing bowl, combine the ground beef chuck, evaporated milk, dry breadcrumbs, Worcestershire sauce, and onion soup mix. Mix thoroughly and refrigerate for at least 1 hour.
  • Adjust the oven rack to the highest level and preheat your broiler to high. Line one or two baking sheets with parchment paper.
  • Once chilled, portion the mixture into approximately 36 meatballs, 1 to 1.5 inches in diameter, and place them on the baking sheet.
  • Broil the meatballs for about 2-3 minutes on each side until browned and cooked through, then set aside.
  • In a saucepan, combine ketchup, brown sugar, port wine, and Worcestershire sauce. Stir until smooth and heated through.
  • For the slow cooker method, place the broiled meatballs in the slow cooker and pour sauce over them. Cook on HIGH for 1 hour.
  • For the Dutch oven method, add the sauce directly to the pot with the broiled meatballs and cook on medium-low for 30-40 minutes.
  • Serve the meatballs hot, garnished with fresh cranberries if desired.

Notes

Refrigerate the meat mixture for at least an hour to enhance texture and flavor. Watch carefully while broiling to prevent burning.
