  • In a large bowl, whisk together the pineapple juice, brown sugar, ketchup, soy sauce, chicken broth, grated ginger, and minced garlic until smooth and fully combined. Set aside one cup of this mixture and add the chicken breasts to the remaining marinade. Cover and refrigerate for 30 minutes.
  • In another bowl, combine the diced pineapple, mango, avocado, chopped cilantro, and lime juice to create the salsa. Toss gently, sprinkle with sea salt, cover, and let sit at room temperature.
  • Heat a grill pan over medium heat with a bit of oil. Discard the marinade and place the marinated chicken on the grill. Cook for 6-8 minutes on each side until the chicken reaches an internal temperature of 165°F, basting occasionally with the reserved marinade.
