For the Meatloaf

  • 2 pounds Ground beef
  • 1 cup Breadcrumbs
  • 2 large Eggs
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

For the Cheese Filling

  • 1 cup Mozzarella cheese
  • ½ cup Parmesan cheese
  • 1 cup Spinach (optional)

For the Topping

  • 1 cup Marinara sauce

Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix thoroughly until just combined.
  • In a separate bowl, combine the mozzarella cheese, Parmesan cheese, and spinach (if using). Mix gently.
  • On a piece of parchment paper, flatten the seasoned meat mixture into a rectangle, about ½ inch thick.
  • Spread the cheese filling over the meat layer, roll tightly jelly-roll style, seam-side down.
  • Transfer to a baking sheet or loaf pan, bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C).
  • In the last 10 minutes of baking, spread marinara sauce over the top of the meatloaf.
  • Once finished, let it rest for about 10 minutes before slicing and serving warm.
