  • ¼ cup ketchup
  • 2 tablespoons soy sauce
  • ¾ cup sugar
  • 2 teaspoons minced garlic
  • 1 tablespoon grated ginger

Optional

  • 1 cup pineapple chunks
  • 1 tablespoon cornstarch for thickening
  • 2 tablespoons water for thickening

  • In a large bowl, toss the chicken pieces with cornstarch until well-coated.
  • Heat vegetable oil in a skillet over medium-high heat and cook chicken until golden brown.
  • Sauté the chopped bell peppers and onion in the same skillet until tender.
  • In a bowl, whisk together vinegar, ketchup, soy sauce, sugar, garlic, and ginger to prepare the sauce.
  • Return chicken to the skillet with vegetables, pour sauce over, and cook for an additional 2 minutes.
  • Add pineapple chunks to the skillet and simmer for 5 minutes.
  • For a thicker sauce, mix cornstarch with water and add to skillet until desired thickness is achieved.
  • Adjust seasoning with salt and pepper.
  • Serve over rice or noodles, garnishing with green onions if desired.

Notes
