  • In a large mixing bowl, combine the chicken chunks with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes.
  • Heat 3 tablespoons of vegetable oil and 1 tablespoon of butter in a large skillet over medium heat. Once the oil is shimmering, add the marinated chicken in a single layer. Cook for about 7-10 minutes until browned and no longer pink inside. Remove the cooked chicken from the skillet.
  • In the same skillet, reduce the heat slightly and add the remaining 2 tablespoons of butter. Add the diced onion and sauté for about 4-5 minutes until translucent, then add minced garlic and continue for another minute until fragrant.
