  • 240 g Vegan yogurt Enhances creaminess and adds a hint of tang.
  • 2 tablespoon Lemon juice Brightens up the flavors, balancing the sweetness.
  • 1 teaspoon Vanilla extract Infuses a warm, aromatic essence into the filling.
  • 1 teaspoon Salt Elevates the overall taste by balancing sweetness.
  • 2 teaspoon Cinnamon Adds that classic warm spice you’ll love in every bite.

For the Topping

  • 250 g Chopped nuts Provides a delightful crunch and nutritious boost.
  • ¾ cup Oats Ensures a delicious crumble texture that complements the filling.

Preparation Steps

  • Preheat your oven to 180°C (350°F).
  • Crush the vegan cookies into fine crumbs and combine with melted vegan butter. Press into the bottom of a springform pan.
  • Bake the crust for 10 minutes, then cool on a wire rack.
  • In a saucepan, cook diced apples, brown sugar, cinnamon, and cornstarch for 8-10 minutes until soft. Set aside to cool.
  • Combine oats, chopped nuts, and other topping ingredients to form a crumble texture.
  • In a blender, blend silken tofu, maple syrup, vegan yogurt, lemon juice, cornstarch, vanilla extract, and salt until smooth.
  • Pour half the filling onto the crust, layer the cooked apples, then add the remaining filling.
  • Sprinkle the crumble topping evenly over the cheesecake.
  • Bake for 55-60 minutes until the edges are set and the center jiggles slightly.
  • Cool at room temperature for an hour, then refrigerate for at least 4 hours to set.
  • Remove from the pan, slice, and serve.
