Step-by-Step Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Mix in pumpkin puree, egg, and vanilla extract until well combined.
  • In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt. Gradually add to the wet ingredients.
  • Fold in chocolate chips, mini marshmallows, and broken graham crackers.
  • Drop rounded tablespoons of dough onto the baking sheet, spaced 2 inches apart.
  • Press additional mini marshmallows, chocolate chips, and graham crackers on top of each cookie.
  • Bake for 12-14 minutes until golden around the edges and soft in the center.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
