  • 20 ounces fresh or frozen cheese tortellini Use fresh for a tender bite, or frozen for convenience.
  • 1 pint cherry tomatoes Halved.
  • 1 cup sliced cucumbers Crisp and refreshing.
  • 1 cup black olives Sliced.
  • 1 cup mozzarella balls or cubed mozzarella cheese Creamy and delicious.
  • ½ cup sliced red onion Soak in water if a milder flavor is desired.
  • 1 cup Italian salami Diced.
  • ½ cup freshly grated Parmesan cheese Adds a luxurious finish.
  • ½ cup fresh basil leaves Chopped.
  • ½ cup Italian dressing Homemade or store-bought.
  • salt and pepper To taste.

Step-by-Step Instructions

  • Bring a large pot of salted water to a rolling boil. Add the tortellini and cook according to package instructions, usually 3-5 minutes for fresh and 7-10 minutes for frozen. Drain and rinse under cold water to stop cooking. Cool completely.
  • In a large salad bowl, prepare the vegetables: halve the cherry tomatoes, slice the cucumbers, and red onion. Combine them in the bowl.
  • Gently fold cooled tortellini into the bowl with vegetables. Add black olives, mozzarella, and salami. Mix well.
  • Drizzle the Italian dressing over the mixture in the salad bowl. Toss everything together gently.
  • Sprinkle in Parmesan cheese and chopped basil. Toss lightly to combine.
  • Season with salt and pepper to taste. Cover and refrigerate for at least 1 hour.
  • Once chilled, give the salad a final toss. Adjust dressing if necessary.
  • Serve chilled in a beautiful bowl and enjoy.
