Step-by-Step Instructions

  • Trim any excess fat from the chuck roast and cut it into 3–4 inch chunks.
  • Heat a skillet over medium-high heat and add 1 tablespoon of oil.
  • Sear the beef chunks on all sides until nicely browned, about 5–7 minutes.
  • Transfer the seared beef into the crock pot and pour in 1 cup of beef broth.
  • In a bowl, mix the chili powder, oregano, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
  • Sprinkle the spice mixture over the beef in the crock pot.
  • Cover the crock pot and set it to low, cooking for 6–7 hours.
  • Once done, shred the beef with two forks.
  • Mix in the reserved seasoning and lime juice to brighten the flavor.
  • Warm tortillas and fill them with the shredded beef and toppings.

Notes
