For the Chicken Base

  • 2 cups cooked chicken diced or shredded; rotisserie chicken works best
  • 2 cups chicken broth homemade or store-bought

For the Rice

  • 1 cup uncooked rice white or brown rice

For the Creamy Mixture

  • 1 cup shredded cheddar cheese for gooey creaminess
  • 0.5 cup grated Parmesan cheese for a sharp bite
  • 1 cup milk whole or low-fat

For the Vegetables

  • 2 cups broccoli florets fresh or frozen
  • 1 medium onion diced
  • 2 cloves garlic minced

For Cooking and Seasoning

  • 2 tablespoons butter for sautéing

  • optional cayenne pepper for a hint of heat

Steps to Prepare

  • In a large saucepan over medium heat, melt 2 tablespoons of butter until bubbly. Add the diced onion and minced garlic, sautéing for about 3-4 minutes, until the onions turn translucent and the garlic is fragrant.
  • Add 1 cup of uncooked rice, stirring well to coat it in the buttery onion mixture. Cook for another 1-2 minutes to toast the rice slightly.
  • Pour in 2 cups of chicken broth and bring to a vigorous boil. Lower the heat to a gentle simmer, cover, and cook for about 12-15 minutes until the rice is almost tender.
  • Stir in 2 cups of broccoli florets, cover, and cook for an additional 5 minutes until vibrant and tender.
  • Incorporate 2 cups of cooked chicken, 1 cup of milk, 1 cup of shredded cheddar, and ½ cup of grated Parmesan cheese. Stir until the cheeses melt and combine.
  • Add salt, pepper, and an optional dash of cayenne to taste. Simmer for a couple of minutes until heated through.
  • Serve the Cheesy Chicken Broccoli Rice warm, garnished with extra cheese or fresh herbs if desired.

Notes
