  • 2 cloves garlic minced
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil good-quality
  • 1 teaspoon pumpkin pie spices
  • ½ teaspoon salt adjust to taste
  • 1 cup chickpeas canned or cooked

For Serving

  • 1 cup fresh veggies like carrots, cucumber, and bell peppers
  • 1 cup pita chips
  • 1 tablespoon extra olive oil for drizzling

  • Gather all ingredients: canned pumpkin, tahini, garlic, lemon juice, olive oil, pumpkin pie spices, salt, and chickpeas.
  • In a food processor, combine canned pumpkin, tahini, minced garlic, and fresh lemon juice. Blend until creamy.
  • While blending, drizzle in the olive oil and gradually add pumpkin pie spices and salt. Blend until fully incorporated.
  • Add chickpeas and pulse until reached desired consistency. For chunky texture, blend less; for smooth, blend more.
  • Transfer to a bowl, cover, and chill for at least 30 minutes. Drizzle with extra olive oil before serving.

Notes

Store leftovers in an airtight container for up to 1 week. Best served slightly chilled or at room temperature.
