  • In a large mixing bowl, combine 2 ½ cups of all-purpose flour, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Stir gently with a whisk.
  • Add 1 cup of chilled, cubed unsalted butter into the flour mixture. Blend until it resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, mixing with a fork until the dough holds together.
  • Divide the dough into two equal discs, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
  • Preheat your oven to 375°F (190°C). Prepare your baking sheet for the pie.
  • In another bowl, combine 4 cups of hulled and halved fresh strawberries with ¾ cup of granulated sugar, 3 tablespoons of corn starch, 1 tablespoon of lemon juice, and 1 teaspoon of vanilla extract.
  • Roll out one dough disc to fit your pie pan, about 12 inches in diameter, and transfer to your 9-inch pie pan.
