Step-by-Step Instructions

  • In a large pot, heat olive oil over medium heat. Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté for about 5–7 minutes.
  • Next, incorporate the diced zucchini and chopped bell pepper into the pot. Cook for an additional 5 minutes until softened.
  • Stir in the drained and rinsed chickpeas, mixing well. Cook for another minute to meld flavors.
  • Slowly pour in the vegetable broth and add the diced tomatoes to the pot. Stir until well combined.
  • Sprinkle in dried oregano, salt, and black pepper to taste. Stir well and let it come to a gentle simmer.
  • Reduce heat to low and let the soup simmer uncovered for about 20 minutes, stirring occasionally.
  • After 20 minutes, fold in the chopped parsley, basil, and mint. Cook for an additional 5 minutes.
  • Remove from heat and stir in the lemon juice to brighten flavors.
  • Ladle the warm soup into bowls, garnishing with grated Parmesan cheese if desired.
