  • 2 medium Zucchini Sliced

  • ¼ teaspoon Pepper

For the Veggies

  • 1 medium Onion Diced
  • 8 ounces Mushrooms Diced, use cremini or button
  • 2 cloves Garlic Minced
  • 2 tablespoons Fresh herbs Thyme, basil, or parsley

For the Finish

  • ¼ cup Vegetable broth For moisture
  • 2 tablespoons Fresh parsley For garnish
  • ¼ cup Grated Parmesan cheese To sprinkle on top

Instructions
 

Cooking Steps

  • Heat the skillet with olive oil and butter over medium-high heat for 1 minute.
  • Sauté zucchini for 3-4 minutes until tender, then remove from skillet.
  • Melt remaining butter and cook diced onion for 2 minutes.
  • Add mushrooms and cook for 5-7 minutes until browned.
  • Mix in garlic and herbs quickly to prevent burning for 20 seconds.
  • Return zucchini to skillet and pour in vegetable broth, stir and simmer for 2 minutes.
  • Adjust seasoning with salt and pepper and garnish with parsley and Parmesan before serving.

Notes

Cut zucchini slices evenly for consistent cooking; use a variety of mushrooms for richer flavor.
