Ingredients
  

For the Sandwich

  • 1 tablespoon olive oil for brushing the bread
  • 4 slices sourdough bread for the sandwich
  • 1 medium avocado ripe, sliced
  • 1 cup smoked chicken breast sliced
  • ¼ cup Peppadew peppers sliced
  • 2 tablespoons fresh cilantro chopped
  • 1 slice Chao creamy original vegan cheese alternative
  • 1 tablespoon chipotle sauce

For the Spicy Mayo

  • 1 tablespoon chipotle adobo sauce
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • 1 clove garlic freshly minced
  • 1 pinch coarse salt adjust to taste

Preparation Steps

  • In a small bowl, mix together the mayonnaise, chipotle adobo sauce, minced garlic, and lemon juice using a whisk until smooth. Adjust seasoning with coarse salt to taste.
  • Place a large skillet over medium-high heat and brush olive oil on the outer sides of each slice of sourdough bread.
  • Carefully place one slice of oiled sourdough bread in the skillet. Layer with Chao creamy original cheese, smoked chicken, avocado, Peppadew peppers, and cilantro. Drizzle with chipotle sauce, then top with another slice of bread.
  • Cook for 3-4 minutes until the bottom slice is golden brown and the cheese begins to melt. Flip the sandwich and cook for another 2-3 minutes until the second side is crispy.
  • Remove from skillet, let rest, slice in half, and serve warm.

Notes

For best results, consume the sandwich fresh and avoid microwaving when reheating to maintain texture.
