Step-by-Step Instructions for Beef Taco Soup

  • In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat until shimmering.
  • Add 1 pound of ground beef to the pot, breaking it apart. Cook for about 5-7 minutes until browned.
  • Stir in 1 diced onion, 1 finely diced jalapeño, and 1 tablespoon of minced garlic. Cook for 4-5 minutes.
  • Sprinkle in 1 teaspoon each of paprika and ground cumin, along with 1 teaspoon of crushed red pepper, and cook for another 1-2 minutes.
  • Pour in 2 cans of crushed tomatoes and 1.75 cups of beef broth, then add 1 teaspoon of salt and 0.5 teaspoon of black pepper. Stir and bring to a simmer.
  • Stir in 1 can of drained black beans and 1 cup of frozen corn, and cook for an additional 10 minutes.
  • Ladle the soup into bowls and top with tortilla chips, cilantro, lime, sour cream, avocado, and cheddar cheese.
