  • Heat a large skillet or wok over medium heat, and add the chopped bacon. Sauté the bacon for about 6-8 minutes until it’s crispy and golden brown, letting the delicious aromas fill the kitchen. Once cooked, use a slotted spoon to remove the crispy bacon and transfer it to a paper towel-lined plate to drain excess fat, leaving the bacon fat in the skillet for added flavor.
  • In the same skillet with the bacon fat, push the remnants to one side and crack in the two large eggs onto the opposite side. Scramble the eggs gently with a spatula for about 2-3 minutes until they are fully cooked and bright yellow. Once scrambled, mix the eggs with the bacon fat, making sure to coat them in that mouthwatering flavor before removing them from the skillet and setting aside with the crispy bacon.
  • Next, add the finely chopped onion to the skillet, sautéing for about 3-4 minutes, or until they become translucent and fragrant. Stir occasionally to prevent burning.
