  • Heat a skillet over medium heat, adding a drizzle of olive oil. Cook the marinated chicken for 6–7 minutes on each side until golden brown and cooked through. Let it rest, then slice into strips.
  • In a clean bowl, combine Greek yogurt, grated cucumber, olive oil, lemon juice, minced garlic, chopped dill, salt, and pepper. Stir until fully blended.
  • Assemble bowls by adding cooked rice, quinoa, or cauliflower rice as the base. Layer chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  • Finish with a sprinkle of fresh parsley or dill. Serve immediately.
