For the Salad

  • 4 cups corn fresh or frozen
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon chili powder
  • ½ cup mayonnaise for creaminess
  • ¼ cup sour cream
  • ¼ cup lime juice
  • 1 cup cotija cheese crumbled
  • ½ cup cilantro chopped
  • 1 avocado optional

Step-by-Step Instructions

  • If using fresh corn, grill or boil it for 5–7 minutes until tender. Cut kernels off the cob. Cook frozen corn per package instructions.
  • In a large skillet, heat olive oil over medium heat. Add the cooked corn, seasoning with salt, pepper, and chili powder. Sauté for 5–7 minutes until lightly charred.
  • In a medium bowl, whisk together mayonnaise, sour cream, and lime juice until smooth.
  • In a large mixing bowl, combine cooled corn with cotija cheese and cilantro. If using, fold in diced avocado.
  • Drizzle the dressing over the corn mixture and toss until everything is well-coated.
  • Transfer to a serving dish and garnish with extra cotija cheese and cilantro. Chill for 30 minutes to enhance flavors.

Notes

Use fresh corn when in season for best flavor. Customize with additional ingredients as desired.
