Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • Peel and chop the sweet potatoes into ½-inch chunks, then chop the yellow onion into 1-inch pieces and spread them on a lined baking sheet.
  • Toss the sweet potatoes and onions with olive oil, salt, garlic powder, and chipotle powder, then bake for 20 minutes.
  • After the initial roasting, push the sweet potatoes to one side of the pan, add broccoli and drizzle with olive oil and salt, place chicken in the center and brush with BBQ sauce.
  • Return to the oven and bake for another 15-20 minutes until chicken is cooked and broccoli is tender.
  • Remove from the oven, shred the chicken and toss with remaining BBQ sauce.
  • Divide chicken, sweet potatoes, onions, and broccoli among bowls and serve immediately.

Notes

Ensure vegetables are cut evenly for uniform cooking. Adjust salt and spices to taste. Store leftovers in an airtight container for up to 3 days.
