  • In a food processor, combine cottage cheese, warm water, instant yeast, granulated sugar, and table salt. Process for 20 to 30 seconds until smooth and creamy.
  • Add cilantro, bread flour, and chili crisp. Pulse in 8 to 10-second intervals until the dough forms a cohesive ball around the blade.
  • Transfer the dough to a greased bowl, cover, and let rise in a warm place until increased in volume by about 1.5 times, 30 to 45 minutes.
  • Turn the dough onto a floured surface and knead gently for 30 to 60 seconds until smooth and springy.
  • Divide the dough into four equal pieces, shape into balls, cover, and let rest for 15 to 30 minutes.
  • Preheat a cast iron skillet over medium-high heat. Roll each ball into a 7 to 8-inch round, brush oil on top, and cook for 1 to 2 minutes until brown.
  • For broiling, grease a baking sheet, stretch the rounds, and broil for about 1 to 3 minutes until golden brown.
