Ingredients
  

For the Rice

  • 2 cups Jasmine rice rinsed
  • 1.5 cups Coconut milk
  • 1.5 cups Water

For the Chicken

  • 1 pound Boneless, skinless chicken thighs cut into bite-sized pieces
  • 2 tablespoons Olive oil
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated

For the Sauce

  • 1 tablespoon Soy sauce
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar

For the Vegetables

  • 1 whole Red bell pepper sliced
  • 1 cup Sugar snap peas
  • 0.5 cup Shredded carrots

For the Garnish

  • 1 bunch Fresh cilantro chopped
  • Salt and pepper to taste
  • Lime wedges for serving

Step-by-Step Instructions

  • Rinse jasmine rice under cold water until the water runs clear. Combine rice, coconut milk, and water in a medium saucepan, bring to a boil, then cover and simmer for 15 minutes. Remove from heat and let sit for 10 minutes.
  • Season chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5–7 minutes until golden brown and cooked through. Remove from skillet.
  • In the same skillet, add minced garlic and grated ginger. Sauté for 1 minute until fragrant.
  • Pour soy sauce, fish sauce, and brown sugar into the skillet. Stir well and simmer until the sauce thickens.
  • Add sliced red bell pepper, sugar snap peas, and shredded carrots to the sauce. Stir-fry for 3–4 minutes until vegetables are tender-crisp.
  • Return cooked chicken to the skillet, stir to coat with sauce and vegetables. Cook for an additional 2–3 minutes until heated through.
  • Fluff the coconut rice and divide among serving bowls. Top with the chicken and vegetable mixture.
  • Garnish with chopped cilantro and serve with lime wedges.

Notes

Rinse jasmine rice thoroughly to ensure fluffiness. Adjust seasoning to taste.
