  • Heat the skillet by adding 2 tablespoons of olive oil over medium heat for about 1-2 minutes until shimmering.
  • Season the 4 cod fillets with 1 teaspoon of salt and cook in the skillet for about 4-5 minutes per side until golden brown and easily flaked.
  • In the same skillet, add 1 cup of roasted red peppers and sauté for around 2 minutes until heated and aromatic.
  • Lower the heat, pour in ½ cup of heavy cream and 1 tablespoon of lemon juice, stirring to combine. Add 2 tablespoons of chopped fresh basil and cook for 2-3 minutes until creamy.
  • Return the cod fillets to the skillet and spoon the sauce over them. Warm for an additional 2-3 minutes on low heat.
  • Serve on plates, optionally garnished with extra paprika.
