Marinade

  • ¼ cup olive oil adds richness and moisture

Skewers

  • 1.5 pounds beef, cubed use tender cuts like sirloin or ribeye

Instructions
 

Preparation

  • Combine olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper in a medium bowl.
  • Add cubed beef to the marinade, toss to coat, cover and refrigerate for at least 30 minutes to 3 hours.
  • Preheat the grill or grill pan over medium-high heat, soak wooden skewers if using.
  • Thread the marinated beef onto skewers with space between pieces.
  • Grill the skewers for 3-4 minutes per side until nicely charred and internal temperature reaches 130°F for medium-rare.
  • Let the skewers rest for a minute, then serve with warm pita and tzatziki.

Notes

For maximum flavor, marinate beef overnight. Pair with salads or vegetables for a complete meal.
