Ingredients
  

For the Marinade

  • ½ cup Bourbon whiskey Use a good quality bourbon for best results.
  • ¼ cup Brown sugar Substitute with coconut sugar for a healthier option.
  • ¼ cup Soy sauce Tamari works as a gluten-free substitute.
  • 2 tablespoons Apple cider vinegar Can be replaced with rice vinegar if needed.
  • ½ cup Chicken broth Vegetable broth for a vegetarian-friendly sauce.
  • 2 cloves Garlic Minced, use roasted garlic for milder flavor.
  • 1 tablespoon Fresh ginger Grated, ground ginger can work in a pinch.
  • 1 small Onion Use shallots for a milder taste if preferred.

For Cooking

  • 1 tablespoon Cornstarch Arrowroot powder can be used as a substitute.
  • 2 tablespoons Water Mixed with cornstarch to create a slurry.
  • 2 tablespoons Vegetable oil Olive oil or avocado oil can be alternatives.
  • to taste Salt Essential for seasoning.
  • to taste Pepper Essential for seasoning.

For Garnishing

  • 2 tablespoons Green onions Chopped, can use chives as an alternative.
  • 1 tablespoon Sesame seeds Try using toasted sesame seeds for enhanced flavor.

Instructions
 

Preparation

  • In a medium bowl, combine the bourbon whiskey, brown sugar, soy sauce, apple cider vinegar, chicken broth, minced garlic, and grated ginger. Whisk until the sugar is fully dissolved, and the mixture is smooth.
  • Place the chicken breasts in a resealable bag or shallow dish. Pour the marinade over chicken, ensuring it's fully coated. Seal the bag or cover, and refrigerate for at least 1 hour, preferably overnight.
  • Preheat the Blackstone griddle to medium-high heat for about 10 minutes. Drizzle 2 tablespoons of vegetable oil onto the surface.
  • Remove the chicken from the marinade, pat lightly with paper towels, and season both sides generously with salt and pepper.
  • Place the chicken onto the hot griddle. Cook for 5–6 minutes on each side until golden-brown and reaching an internal temperature of 165°F (74°C).
  • Strain the reserved marinade through a fine mesh. Pour the strained liquid into a saucepan and bring to a gentle boil.
  • Whisk together cornstarch and water in a small bowl to create a slurry. Slowly pour into the boiling marinade while whisking. Cook until glossy and thickened, about 3–5 minutes.
  • Brush the thickened sauce over cooked chicken on the griddle. Let sit for a couple of minutes to meld the flavors.
  • Transfer the glazed chicken to a cutting board and slice into medallions for presentation. Arrange on a platter and drizzle with leftover sauce. Garnish with green onions and sesame seeds if desired.

Notes

Marinate chicken for at least 1 hour, but overnight for deeper flavors. Ensure griddle is preheated for the best sear.
