  • 2 medium Sweet potatoes washed and peeled
  • 2 tablespoons Olive oil for tossing
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

For the Topping

  • 2 tablespoons Honey warmed slightly
  • 1 cup Feta cheese, crumbled for sprinkling
  • 2 tablespoons Fresh thyme leaves for garnish
  • ½ teaspoon Red pepper flakes optional, for spice

Preparation Steps

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Wash and peel the sweet potatoes, then slice them into ½-inch thick rounds.
  • In a mixing bowl, toss the sweet potato rounds with olive oil, then season with salt and pepper.
  • Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
  • Roast the sweet potato rounds in the oven for 20–25 minutes, flipping halfway through.
  • Once roasted, drizzle warmed honey over the rounds.
  • Top with crumbled feta cheese and thyme leaves, adding red pepper flakes if desired.
  • Serve warm and enjoy!

Notes

For best results, ensure sweet potato slices are uniform in thickness and do not overcrowd the baking sheet during roasting.
