For the Stir Fry

  • 1 pound ground beef lean beef cuts are ideal
  • 2 tablespoons olive oil perfect for sautéing
  • 1 medium onion chopped, yellow or white onions work well
  • 2 cloves garlic minced
  • 1 medium red bell pepper sliced
  • 1 medium zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 teaspoon dried oregano a staple Mediterranean herb
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes optional
  • salt to taste
  • black pepper to taste

For the Garnish

  • ¼ cup Kalamata olives sliced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice
  • ½ cup feta cheese crumbled

Step-by-Step Instructions

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat for about a minute. Sauté 1 medium chopped onion for 3-5 minutes until translucent.
  • Stir in 2 cloves of minced garlic and cook for 1 minute until fragrant.
  • Add 1 pound of ground beef, breaking it up as it cooks for 6-8 minutes until browned. Drain excess fat if needed.
  • Incorporate 1 sliced red bell pepper and 1 sliced zucchini, cooking for 5 minutes.
  • Add 1 cup of halved cherry tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of ground cumin, ½ teaspoon of paprika, and ¼ teaspoon of red pepper flakes. Season with salt and black pepper. Cook for an additional 3-4 minutes.
  • Stir in ¼ cup of sliced Kalamata olives and 2 tablespoons of chopped parsley. Heat through for 1 minute.
  • Remove from heat and add 1 tablespoon of fresh lemon juice and gently fold in ½ cup of crumbled feta cheese.
  • Serve hot alongside rice, quinoa, or couscous.

Notes

Use lean ground beef for a healthier dish. Prep ahead by chopping vegetables and measuring spices.
