Ingredients
  

For the Pasta

  • 1 lb short tube-shaped pasta rigatoni or penne

For the Vegetables

  • 2 pieces medium peppers chopped
  • 1 piece medium aubergine chopped
  • 1 piece medium courgette chopped
  • 1 piece medium onion chopped
  • 1 cup cherry tomatoes
  • 1 can chopped tomatoes 14 oz

For Flavor

  • 3 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 handful fresh basil chopped

For the Cheesy Goodness

  • 8 oz mozzarella cheese in chunks or slices
  • ½ cup pesto
  • ½ cup grated Parmesan cheese

For Adjusting Consistency

  • 4-6 tablespoon reserved pasta cooking water

Step-by-Step Instructions

  • Preheat your oven to 190°C (170°C Fan) or Gas Mark 5. Place the chopped vegetables in a roasting tin.
  • Drizzle with olive oil, season with salt and pepper, and mix to coat the vegetables well.
  • Roast the vegetables for 45 minutes, turning them twice for even roasting.
  • Stir in the cherry tomatoes, canned chopped tomatoes, minced garlic, and fresh basil, then return to the oven for 10-15 minutes.
  • Boil salted water. Cook the pasta until al dente, about 8-10 minutes.
  • Reserve 4-6 tablespoon of cooking water, then drain the pasta.
  • Combine pasta with the roasted vegetable mixture, adding reserved cooking water to adjust consistency.
  • Incorporate mozzarella cheese and pesto into the mixture.
  • Sprinkle grated Parmesan cheese on top.
  • Bake for an additional 10 minutes until the cheese is melted and bubbly.
  • Cool slightly before slicing and serving.

Notes

This pasta bake can be prepared one day in advance and refrigerated before baking.
