  • Brown the sausage by heating olive oil in a large pot over medium heat. Add Italian sausage, breaking it up as it cooks until browned, about 5-7 minutes. Remove and set aside, leaving flavors in the pot.
  • Sauté onion, garlic, carrots, and celery in the same pot over medium heat until softened, roughly 5-7 minutes.
  • Stir in dried basil, dried oregano, ground black pepper, and red pepper flakes, cooking for an additional minute.
  • Pour in chicken broth and diced tomatoes, increase heat to high, and bring to a rolling boil for about 5 minutes.
  • Add uncooked pasta and cook according to package instructions, about 8-10 minutes, until al dente.
  • Return sausage to pot along with fresh spinach, stirring until spinach wilts, about 2-3 minutes.
  • Stir in grated Parmesan cheese, allowing it to melt. Taste and adjust salt if necessary.
  • Serve hot, garnishing with extra Parmesan if desired.
