Ingredients
  

For the Stir Fry

  • 1 pound large shrimp peeled and deveined
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 2 tablespoons vegetable oil or any cooking oil you prefer
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1 each red bell pepper sliced into thin strips
  • 1 cup snap peas trimmed

For the Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce optional
  • 1 tablespoon cornstarch
  • 1 tablespoon water

To Finish

  • salt and pepper to taste
  • cooked rice or noodles your choice
  • sesame seeds and green onions for garnish (optional)

Step-by-Step Instructions

  • Rinse 1 pound of large shrimp under cold water and pat them dry. Season with salt and pepper and set aside.
  • Wash 1 bunch of asparagus, trim ends, and cut into 2-inch pieces. Slice 1 red bell pepper into thin strips. Rinse 1 cup of snap peas.
  • Peel and mince 3 cloves of garlic and 1 tablespoon of fresh ginger. Place in a small bowl.
  • In a small bowl, whisk together soy sauce, oyster sauce (if using), cornstarch, and water until cornstarch dissolves.
  • Heat a large skillet over medium-high heat, add vegetable oil, and swirl to coat.
  • Add minced garlic and ginger to the hot oil and stir-fry for about 30 seconds until fragrant.
  • Add the shrimp in a single layer and cook for 2-3 minutes without stirring. Flip and cook for another 1-2 minutes, then remove and set aside.
  • In the same pan, add asparagus and red bell pepper. Stir-fry for 2-3 minutes until bright and softened.
  • Add snap peas and stir-fry for 2 minutes.
  • Return shrimp to the pan, pour in the stir-fry sauce, and stir to coat evenly. Cook for another 1-2 minutes until sauce thickens.
  • Serve over cooked rice or noodles, garnished with sesame seeds and green onions if desired.

Notes

Store in an airtight container for up to 3 days in the fridge or freeze for up to 3 months. Reheat gently for best results.
