Preparation Steps

  • Start by placing the 2 lbs of chicken breasts at the bottom of your slow cooker.
  • Add the diced onion, salsa, black beans, diced tomatoes, diced green chiles, and chicken broth on top of the chicken.
  • Sprinkle in the chipotle chile powder, paprika, oregano, salt, and black pepper evenly over the mixture.
  • Cover the slow cooker and set it to cook on low for 4 hours.
  • Carefully remove the chicken breasts from the slow cooker and shred them.
  • Stir in 2 cups of instant rice to the slow cooker.
  • Sprinkle the shredded Colby-Jack cheese over the mixture and let it melt for 3-5 minutes.
  • Scoop the mixture into individual bowls and top with sour cream, avocado slices, and jalapeños.

Notes
