  • In a medium-sized skillet, warm 1 tablespoon of olive oil over medium heat.
  • Add 1 small chopped onion and sauté for about 3-4 minutes until translucent.
  • Introduce 2 cloves of minced garlic to the skillet and cook for an additional minute.
  • Stir in the drained 15 oz can of black beans, 1 teaspoon of smoked paprika, and ½ teaspoon of ground cumin.
  • Create small wells in the bean mixture and carefully crack one egg into each well.
  • Cover the skillet and let the eggs simmer for 5-7 minutes.
  • Sprinkle fresh cilantro or parsley on top before serving.
