Step‑by‑Step Instructions

  • Heat olive oil in a large pot over medium heat, add onion and sauté until translucent.
  • Stir in garlic, red bell pepper, green bell pepper, and jalapeño; cook until peppers soften.
  • Add ground chicken, breaking apart; cook until browned and no longer pink.
  • Mix in black beans, fire-roasted tomatoes, corn, chili powder, cumin, paprika, salt, and pepper.
  • Pour in chicken broth, bring to boil, then simmer uncovered for 20-25 minutes.
  • Stir in sour cream until combined for a creamy texture.
  • Add cilantro and lime juice, stir to bring freshness to the chili.
  • Serve garnished with cotija cheese and extra cilantro with tortilla chips on the side.

Notes
