  • In a medium saucepan, combine 1 cup of rice with 2 cups of water or chicken broth. Bring to a boil, then reduce to low, cover and simmer for 15 minutes. Fluff with a fork after cooking.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef or turkey. Season with salt, pepper, and 1 packet of taco seasoning. Cook for 5-7 minutes until browned.
  • Stir in 1 can of drained black beans and 1 cup of corn into the meat mixture. Cook for 2-3 minutes until heated through.
  • To serve, place a scoop of cooked rice in a bowl and top with the meat mixture, followed by 1 cup of diced tomatoes, shredded lettuce, and 1 cup of shredded cheddar cheese.
  • Drizzle with salsa and garnish with fresh cilantro and a lime wedge. Serve immediately.

Notes

For best results, rinse the rice before cooking. Adjust spices to taste and feel free to experiment with additional toppings.
