  • Prepare the chicken by cutting the boneless chicken thighs (or breasts) into thin strips or bite-sized pieces, about 1-2 inches long.
  • Marinate the chicken by whisking together soy sauce, brown sugar, coconut milk, curry powder, minced garlic, and lime juice until well combined. Add the chicken and refrigerate for 30 minutes.
  • Soak bamboo skewers in water for at least 15 minutes to prevent burning during grilling.
  • Prepare the peanut sauce in a saucepan by combining peanut butter, soy sauce, lime juice, honey, minced garlic, and coconut milk. Stir over medium heat until smooth, approximately 5 minutes. Add chili paste if desired.
  • Assemble skewers by threading marinated chicken pieces onto soaked skewers, spacing for even cooking.
  • Preheat the grill to medium-high heat or broil oven to broil mode, ensuring it reaches a steady temperature.
  • Cook the chicken skewers on the grill for 4-5 minutes on each side until caramelized and cooked through (internal temp of 165°F).
