Preparation Steps

  • Pat the beef roast dry with paper towels, season with salt and pepper.
  • Heat olive oil in a sauté pan, sear the roast on all sides for 4-5 minutes.
  • Sauté sliced onion with a pinch of salt and pepper for about 4 minutes.
  • Add minced garlic, tomato paste, brown sugar, Italian seasoning, garlic powder, onion powder, and chili powder; cook until fragrant.
  • Deglaze the pan with a splash of beef stock, scraping browned bits.
  • Transfer onion and garlic mixture to the slow cooker, add carrots and potatoes.
  • Pour in beef stock, ensuring the roast is well-immersed.
  • Add fresh thyme, rosemary, and bay leaves, adjusting salt and pepper to taste.
  • Cover and cook on low for 8-10 hours or high for 4-5 hours.
  • Strain cooking liquid into a saucepan, heat until rich.
  • Mix cornstarch with cold water, add to strained liquid to thicken gravy.
  • Serve the roast with carrots and potatoes, drizzle with gravy and garnish with parsley.

Notes

Make extra gravy with remaining cooking liquid for leftovers.
