Step‑by‑Step Instructions

  • Preheat your oven to 350°F (177°C). Spray a 9" x 13" baking pan with nonstick spray and line it with parchment paper.
  • Follow the brownie mix instructions to prepare the batter, pour it into the prepared baking pan, and smooth the top.
  • In a stand mixer, combine ½ cup of creamy peanut butter and 4 tablespoons of softened unsalted butter. Mix until smooth.
  • Add light brown sugar, granulated sugar, eggs, and vanilla extract to the peanut butter mixture. Beat until creamy.
  • In a separate bowl, whisk together flour, baking soda, and salt. Stir in oats and chocolate chips.
  • Gradually add dry ingredients to the peanut butter mixture and mix until just combined.
  • Drop spoonfuls of the oatmeal mixture over the brownie batter, distributing evenly.
  • Sprinkle Halloween sprinkles and add large candy eyes to the top of the brownie batter.
  • Bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
  • Let it cool on the counter for at least 30 minutes before lifting brownies out with parchment paper.
  • In a mixer, combine softened unsalted butter, confectioners' sugar, vanilla extract, and heavy cream. Beat until creamy.
  • Mix in a few drops of neon green gel food coloring until well blended.
  • Pipe frosting onto the brownies and add mini candy eyes to the frosting.
  • Let the frosting set before slicing and serving your Halloween Monster Brownies.
