For the Chicken

Prepare the Marinade

  • In a large bowl, whisk together the pineapple juice, brown sugar, ketchup, soy sauce, chicken broth, minced ginger, and minced garlic until well combined. Reserve 1 cup of this marinade in a separate bowl and add the diced chicken to the remaining marinade. Cover and refrigerate for 30 minutes.

Mix the Tropical Salsa

  • Combine diced pineapple, diced mango, diced avocado, chopped cilantro, and lime juice in another bowl. Toss gently and sprinkle sea salt before serving.

Grill the Chicken

  • Heat a grill pan over medium heat, brush it with oil, and grill the marinated chicken for 6-8 minutes on each side until fully cooked.
