Step-by-Step Instructions

  • Preheat your oven to 425°F and line a baking sheet with aluminum foil. Arrange 8 slices of thick-cut bacon on the sheet. Bake for 25-30 minutes until crispy.
  • While the bacon is baking, divide 1 pound of ground pork sausage into 4 patties. Cook in a skillet for 3-4 minutes per side. Add cheese on top in the last minute.
  • Wipe the skillet clean and melt 1 tablespoon of butter. Add 8 beaten eggs, salt and pepper. Stir continuously until thickened.
  • Spread 1 tablespoon of cowboy butter on one side of each slice of bread. Start with a slice of bread, place a sausage patty on it, then top with another slice.
  • Layer 2 pieces of crispy bacon, sliced avocado, and ½ cup of scrambled eggs on the second slice. Finish with another slice of bread.
  • Cut each sandwich into four triangles and secure with toothpicks. Serve immediately while warm.
