  • 1 cup Green beans Trimmed and cut

For the Creamy Sauce

  • 1 can (14 oz) Coconut milk For creaminess
  • 2 tablespoons Curry powder Quality blend
  • 1 teaspoon Allspice
  • 1 teaspoon Smoked paprika

For the Broth

  • 1 cup Vegetable broth

For Garnish & Serving

  • 1 cup Fresh cilantro Optional for garnish
  • 1 Lime wedges For serving

Step-by-Step Instructions

  • In a large pot, heat coconut oil over medium heat until fully melted.
  • Add onion, garlic, and ginger to the pot. Sauté for about 3-4 minutes.
  • Introduce the chopped red and yellow bell peppers. Cook for another 2-3 minutes.
  • Stir in chopped carrots and cauliflower florets. Mix well and cook for an additional 2 minutes.
  • Sprinkle curry powder, allspice, and smoked paprika over the mixture. Stir for about a minute.
  • Pour in coconut milk, stirring to incorporate.
  • Pour in vegetable broth and stir until well blended.
  • Bring the mixture to a gentle simmer, cover, and cook for 15-20 minutes.
  • In the final 5 minutes, add trimmed green beans and cover.
  • Remove pot from heat, taste, and adjust seasoning if necessary.
  • Before serving, garnish with fresh cilantro and serve with lime wedges.

Notes
