  • 0.5 teaspoon Salt Adjust to taste.
  • 0.25 teaspoon Black pepper Mild heat.
  • 1 cup Heavy cream For a lighter version, use half-and-half.

For Garnish

  • 6 leaves Fresh basil Adds brightness to the presentation.

Step-by-Step Instructions for Creamy Tomato Soup

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 cup of chopped onion and sauté for 5-7 minutes until softened and translucent. Stir in 1 teaspoon of minced garlic, cooking for another minute until fragrant.
  • Pour in 2 cups of crushed tomatoes and 1 cup of vegetable broth. Stir in 1 teaspoon of dried basil, 1 teaspoon of sugar, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Bring to a gentle boil, then simmer uncovered for 15-20 minutes, stirring occasionally.
  • Remove from heat and blend the soup until smooth using an immersion blender. If using a regular blender, blend in batches and return to the pot.
  • Return the pot to low heat. Slowly stir in 1 cup of heavy cream until combined. Warm through, ensuring it doesn’t boil. Adjust seasoning if needed.
  • Ladle the soup into warm bowls and garnish with fresh basil leaves. Serve with crusty bread or grilled cheese.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop.
