For the Soup

  • 2 cans white cannellini beans Drained and rinsed.
  • 3.5 cups chicken broth Or vegetable broth for a vegetarian option.
  • 2 cups fresh kale Chopped.

  • 1 tablespoon lemon juice Add just before serving.

Step-by-Step Instructions

  • In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Once it's shimmering, add the diced onion and sauté for about 5 minutes until the onion becomes translucent and fragrant.
  • Stir in 2 minced cloves of garlic, 2 diced carrots, and 2 diced celery stalks. Cook for 3–5 minutes until the vegetables soften and release their aromas.
  • Sprinkle in ½ teaspoon of Italian seasoning and ½ teaspoon of chili powder, stirring well to combine.
  • Pour in the 2 cans of drained and rinsed white cannellini beans and 3 ½ cups of chicken or vegetable broth, increasing heat to bring to a gentle boil.
  • Once boiling, reduce heat to low and let the soup simmer uncovered for about 20 minutes.
  • Stir in the 2 cups of chopped fresh kale and cook for an additional 5 minutes until it wilts.
  • Taste the soup and season with salt and pepper as desired, adding a splash of lemon juice before serving.

Notes

For a bright finish, add lemon juice just before serving. Adjust the consistency if needed by adding more broth or water.
