Ingredients
  

For the Chipotle-Lime Sauce

  • ½ cup lime juice
  • ½ cup sour cream
  • ½ cup mayonnaise can substitute with Greek yogurt
  • 1 teaspoon garlic salt consider fresh garlic for a bigger kick
  • 1 chopped chipotle pepper
  • ¼ cup chopped cilantro parsley can be a great alternative

For the Blackened Fish

  • 4 fillets fish (tilapia, cod, or mahi-mahi)
  • ¼ cup melted butter
  • 1 tablespoon garlic powder experiment with onion powder
  • 1 tablespoon paprika
  • 1 tablespoon onion powder fresh onions can substitute
  • 1 teaspoon cayenne pepper adjust to your heat preference
  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • to taste salt & black pepper a pinch of smoked salt adds flavor

For Assembly

  • 8 tortillas soft corn or flour
  • 2 cups shredded cabbage or slaw mix for convenience
  • 1 cup Cotija cheese feta cheese is an alternative
  • ¼ cup additional chopped cilantro
  • 2 wedges lime for squeezing

  • Make the Chipotle-Lime Sauce by blending lime juice, sour cream, mayonnaise, garlic salt, chopped chipotle pepper, and cilantro until smooth.
  • Prepare the Blackening Seasoning by mixing garlic powder, paprika, onion powder, cayenne pepper, thyme, basil, oregano, salt, and black pepper in a bowl.
  • Coat the fish fillets in melted butter then sprinkle with blackening seasoning, ensuring even coverage.
  • Cook the fish in a skillet with olive oil for about 2 minutes on each side until blackened and flaky.
  • Transfer cooked fish to paper towels to absorb excess oil and repeat cooking process for remaining fillets.
  • Warm the tortillas over a flame or in a skillet to make them pliable.
  • Assemble tacos by layering shredded cabbage, blackened fish, and any additional toppings.
  • Finish the tacos by adding cilantro, Cotija cheese, and drizzle with chipotle-lime sauce before serving.
