Ingredients
  

For the Shrimp

  • 1 lb shrimp, peeled and deveined for quick cooking and a burst of protein

For the Mango Salsa

  • 1 cup fresh mango provides sweet tropical flavor

For the Base

Instructions
 

Prepare the Mango Salsa

  • Dice the fresh mango, finely chop the red onion, and mince the jalapeño. In a bowl, combine these with lime juice, salt, and pepper. Toss gently and set aside.

Season the Shrimp

  • Sprinkle the shrimp with chili powder, salt, and pepper, ensuring they are evenly coated.

Sauté the Shrimp

  • Heat olive oil in a skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side until pink and opaque.

Assemble the Bowls

  • Place a scoop of rice or quinoa in each bowl, top with shrimp, and layer avocado slices.

Add the Mango Salsa

  • Spoon mango salsa generously over the shrimp and avocado in each bowl.

Garnish and Serve

  • Garnish with chopped cilantro and serve immediately while fresh and warm.

Notes

Perfectly cooked shrimp will be pink and opaque after 2-3 minutes. Let mango salsa rest for maximum flavor.
